Since 1922, the Galleu Company has been involved in cereal milling, setting up a roller mill powered by gas-powder (coal). In 1984, the new Mill was built to meet broader market needs, both in terms of quality and quantity. Thanks to perseverance, research, and the care in collecting machines, tools, and every other equipment related to the miller’s profession, it has been possible to preserve those devices, instruments, and tools that today allow the creation of a museum rich in history and traditions. For several years, there has been a close collaboration with the Ozieri Civic Museum during ethnographic exhibition setups, especially those concerning the art of milling and baking. The restoration and operation of an ancient roller mill is the museum’s highlight. The aim of this work is to familiarize, particularly school groups and tourists, with ancient milling methods by allowing direct observation of the transformation of wheat into flour.
