An integral part of the museum network of the Food Museums of the Parma province, the museum, housed inside an ancient “casello” from the mid-1800s, documents with an educational setup the history of Parmigiano Reggiano production and its deep connection with the territory. Over 120 objects, dating from the 1800s to the first half of the twentieth century, and about one hundred images, drawings, and vintage photos illustrate, within a building used for centuries for cheese production, the evolution of milk processing techniques, the aging and commercialization phases, and the fundamental role of the Parmigiano Reggiano Consortium in safeguarding quality. In the rustic rooms annexed to the main body of the museum, there is also an exhibition of farm tools and everyday objects related to food themes from rural civilization. Finally, the Museum Shop where you can taste the unbeatable product. Opened in 2003, the museum displays materials mostly from the second half of the nineteenth century to the first half of the twentieth century collected from all the provinces where Parmigiano-Reggiano is produced (Parma, Reggio Emilia, Modena, Bologna, and Mantua). Given the relative uniformity of the material, the exhibition has been arranged as if to “refurnish” the old Meli-Lupi dairy. In fact, the oldest part of the building exhibits objects related to cheese-making phases from past centuries, with names showing the close link with the territory and its rural culture. Visitors then enter the salting room, a semi-underground space built in 1963, where changes in the salting process over time are shown through panels. The tour continues with the section dedicated to gastronomy, with recipe books, drawings, and tools, which also offers the opportunity to taste the product. The visit ends in the rustic annexed rooms, hosting an exhibition on local rural civilization.
