The complex has been home for years to the headquarters of Slow Food, the popular association that has contributed to the safeguarding and revival of several typical Italian food productions; the University of Gastronomic Sciences, the only one in Italy, and, for some time now, also the Wine Bank, a special organization that acts as a place for preserving the historical memory of the best Italian wine productions.

Here, in the large royal cellars, bottles sent by about 300 producers, selected throughout the national territory based on quality and rigor in the grape processing methods, rest for years, constantly studied and monitored by the experts of the Bank, who guarantee their proper aging and refinement.

One of the most interesting things about this Bank is that it is not a closed organization for insiders only but a reality open to the world, to all those who wish to broaden their horizons regarding wine.

With a simple reservation, one can participate in “walks with a glass in hand,” guided tastings, in various languages, among the regional wine productions. At the Tasting Workshops, seminars and laboratories, where wine is paired with local cured meats and cheeses. And at dinners with fun “blind” tastings, with a blindfold over the eyes, to recognize wines by smell and taste.
