At Bottega del Buongustaio, right in the center, one immerses themselves, for example, in a temple of legumes, cereals, local spelt, fragrant white and black truffles from Norcia, typical pasta and cheeses, cured meats and wild boar hams, organic jams, and other delicacies. At Pasticceria Sensi, on Corso Mazzini, the traditional sweets reign instead: the rocciata, a spiral roll of puff pastry filled with walnuts, apples, pine nuts, dried fruit; the brustengolo, a simple corn flour cake to which raisins, apples, walnuts, and pine nuts are added; the francescani, cookies with raisins and honey; the Easter cake or the almond serpent. In the Franciscan lands, oil could not be missing: from the olive groves covering the Subasio hill range come olives of the prized Moraiolo cultivar, as well as Leccino and Frantoio, which allow the production of the Colli Assisi-Spoleto Dop extra virgin olive oil, a yellow-green treasure, with an intense and fruity flavor, with decidedly bitter and spicy notes, available at local mills, such as the Brunozzi Farm, a couple of kilometers from Assisi, or at the Due Torri Farm, near Spello, which produces it from organically grown olives.
