In the Franciscan lands, oil could not be missing: from the olive groves covering the hilly Subasio area come olives of the prized Moraiolo cultivar, as well as Leccino and Frantoio, which allow the production of the Colli Assisi-Spoleto Dop extra virgin olive oil, a yellow-green treasure, with an intense and fruity flavor, with decidedly bitter and spicy notes, available in the local mills, such as the Brunozzi Farm one, a couple of kilometers from Assisi, or at the Due Torri Farm, near Spello, which produces it from organically grown olives.
