Chi dice Valle d’Aosta dice anche Fontina Dop, un prodotto dalla bontà unica, che non può mancare in un giro di shopping goloso. Occorre poi ricordare che, per questa terra, la fontina non è soltanto un formaggio, ma anche un’importantissima voce economica, che mette in moto ogni estate circa 300 alpeggi, diverse centinaia di produttori, commercianti, affinatori e ristoratori.

Among the many good addresses, stands out, in the capital Aosta, La Maison de la Fontine, one of the oldest cheesemakers and the only aging shop in the city. The underground premises, cool and kept at constant humidity, host small and selected productions from the alpine pastures of St.Oyen, Col Collon, at 2700 meters altitude, and the Alta Val Peline. Right here, in the locality of Frissionière, nestles another excellent address: The Milk and Fontina Producers Cooperative, founded in 1956, which gathers 300 members and markets a large part of the Fontina from Val d’Aosta. Worth a visit is its aging center inside the old copper mine of Preslong, active until the end of 1940, 6 km long, whose temperature and humidity conditions have proven optimal for cheese maturation. At the entrance, a visitor center has also been set up, with exhibition areas on history, environment, and processing, multimedia stations, and a convenient sales point, where you can buy not only Fontina, but also Fromazdo, the region’s second PDO, a cheese equally tasty, but a little less fatty than its famous “cousin”.
